This isn't just any recipe—it’s a treasure trove of flavors, a testament to the simple magic of eggs poached in a sauce of tomatoes, bell peppers, onions, and a medley of spices.

Ingredients (for 2 hungry parents)
Olive oil
1 onion, diced
1 bell peppers, diced
4 tomatoes, diced (or a can of diced tomatoes)
3 garlic cloves
1 tsp paprika
4 eggs
Salt and pepper, to taste
Hot sauce, to taste
Fresh parsley and feta cheese for garnish
Instructions:
Heat olive oil in a skillet over medium heat.
Sauté onion and bell peppers until soft.
Add garlic and paprika.
Stir until fragrant.
Pour in tomatoes.
Season with salt, pepper, and hot sauce.
Simmer until thickened.
Make wells in the sauce.
Crack an egg into each.
Cover; cook until eggs are set.
Garnish with parsley and feta.
Serve with crusty bread.
